Portugal is one of the oldest countries in the world, and since its establishment hundreds of years ago, it has developed many traditions that still reach us today.

Being Portugal a country where Christianity is deeply rooted, Easter always had a great religious significance. In our case, what we remember most fondly are the family celebrations from our childhood, where several typical dishes that were made only at this time could not be absent from our tables. The Passover ‘Folar’ was one of them.

The Folar is a bread of golden color and soft texture and flavor. Depending on the area where it is made, it may present some variants in terms of taste and appearance.

This is Tiago’s mother recipe and it’s the typical folar of the region of Guarda, in the north of Portugal, it is recognizable by its oval shape, the light olive oil taste and the crunchy crust with egg wash.

This bread can be accompanied by anything, but there is nothing better than enjoying a warm slice with some melting butter on top.

Ingredients

  • 500gr flour
  • 6 eggs
  • 100ml olive oil
  • 25gr margarine
  • 25ml water
  • 37gr bakers yeast
  • 1 tsp salt

Preparation

Pour the flour, salt, water and baker’s yeast into a large bowl.

Beat the eggs in another bowl.

Melt the margarine and pour over the flour.

Mix the ingredients with your hands and, alternately and phased, add the eggs and olive oil.

Knead until the dough stops sticking to the sides of the bowl and a ball is formed.

Put some flour on top of the dough, cover with cellophane and some cloths and let it rise between 1h30 and 2h.

Preheat the oven to 200 degrees Celsius.

Sprinkle the countertop with flour and mold the dough in the Folar shape. To do this mold the ball os dough into a not too flat oval shape and then fold it in half. Beat an egg and brush the top of the Folar and let it rise for another 30 minutes.

Place the Folar in a tray lined with parchment paper and bake in the oven for 25 minutes to 30 minutes. It will be ready when it has a golden color. To make sure it is well cooked you can do the toothpick test.

Then you just have to taste this typical Portuguese delicacy.
