Vegan Pancakes

Ever since we were little pancakes are a part of our imaginary thanks to the many american series and films we used to watch where those were a basic requirement at the breakfast table.

In our culture is almost unfathomable to wake up in the morning and waste a substancial amount of time cooking a meal because the norm is to drink a cup of coffee accompanied by a sandwich or some sort of pastry.

The good thing about having your own home is that you can break away from old traditions to create your own. There are few things better than waking up to the smell of freshly made pancakes still nice and warm. And it’s even better when you can make this sweet treat without animal products.

It might no seem like it but making pancakes is a lot easier than it looks, and very quick as well. You just add all the ingredients in a bowl and mix it all together.

Because this recipe does not require the use of eggs it requires some previous preparation. Linseed flour is the magical ingredient used to replace the whipped egg whites and make the pancakes fluffy.

You just need a tablespoon of linseed flour and two tablespoons of water. mix it in a container and let it rest for at least twenty minutes. After that time the mixture should have turned into a sort of jelly much like what happens to chia seeds in contact with water.

To replace cow milk we use oat milk because it’s our favorite, burt you can use any vegetable drink like soy, rice or almond milk.

  • 250gr flour
  • 250ml oat milk
  • 1 tblsp linseed flour
  • 1 tblsp sugar
  • 1 tsp agave syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt


Previously pour into a container a tbsp linseed flour and two tbsp of water. Let it sit for alt least twenty minutes until the water turns into gelatin.

Leave a frying pan on the stove at medium/high heat.

In a bowl add the flour and milk slowly, alternately, so the two ingredients are well blended. Use a wire whisk to mix the dough.

Add the sugar, the agave syrup, the salt and the olive oil. Mix the ingredients.

Lastly add the linseed gelatin and mmix it in once again.

Use a ladle to pour a some dough in the frying pan.

Once the pancake starts to bubble flip it with a spatula to cook the other side.

After some seconds it should have cooked trough and it should look golden a delicious.

Remove it from the frying pan a repeat the process until you have no more dough.

Serve with some maple syrup drizzled over the pancakes.
